2 cups almond milk
1 medium apple, shredded with skin on
3 teaspoons baking powder
4 tablespoons butter, melted
2 tablespoons chia seeds, optional
1 teaspoon cinnamon
2 large egg whites
2 tablespoons maple syrup
½ cup oats
1 cup whole wheat pastry flour

Directions
Preheat your waffle maker to medium-high heat. Lightly coat the cooking grids with cooking spray before adding batter to each batch.
In a small bowl, whisk the egg whites until foamy and set aside.
In a large mixing bowl, combine the melted butter, almond milk, maple syrup, shredded apple, and whipped egg whites. Mix until well blended.
Add the whole wheat pastry flour, rolled oats, baking powder, chia seeds, and cinnamon to the wet ingredients. Stir gently until just combined—do not overmix, as some lumps are acceptable and will help keep the waffles light.
Pour approximately ½ cup of batter into the center of each waffle maker well. Using a spoon, gently spread the batter toward the edges to ensure even cooking.
Close the waffle maker lid and cook until the waffle is golden brown and crispy. The lid should lift easily when the waffle is fully cooked, indicating it is ready to remove.
