Ingredients

Coconut oil for greasing

1 banana, peeled and sliced

2 cups fresh pitted cherries

1/2 cup coconut milk

1 cup fresh raspberries

1 tablespoon raw honey

Directions

  1. Lightly coat the inside of popsicle molds with coconut oil to prevent sticking.

  2. Add the banana slices, cherries, coconut milk, raspberries, and honey to a blender in the order listed.

  3. Blend on high speed for 30 seconds until the mixture is smooth and well combined.

  4. Carefully pour the blended mixture into the prepared popsicle molds, filling each to near the top. Freeze for 30 minutes until partially set.

  5. Insert popsicle sticks into the center of each pop and return to the freezer for at least 3 hours, or until completely frozen overnight.

  6. Remove from the freezer, run warm water briefly over the outside of the molds to release, and enjoy immediately.

This is a straightforward frozen pop recipe with ingredients widely available at Charlotte chains—coconut oil, banana, cherries, raspberries, and honey are all standard at Harris Teeter, Food Lion, or Walmart, with coconut milk available everywhere. At roughly $8–10 for six pops, the cost per serving lands around $1.35–$1.65, driven by fresh berries if you're buying out of season; winter berries from the wholesale sections at Costco or buying frozen would help. The stated 190 minutes is honest for freezing time but misleading for active prep—actual hands-on work is 10–15 minutes, which matters for a weeknight. These reheat beautifully (they're meant to thaw slightly before eating) and make a no-fuss dessert that doesn't demand attention once frozen, though the recipe assumes you're planning a day or two ahead.
