4 cups water

2 packages (3 ounces each) ramen-style noodles

1/4 cup peanut butter

2 tablespoons low-sodium soy sauce

1/2 cup water

1 tablespoon vegetable oil

2 boneless, skinless chicken breasts, cut into strips

1 teaspoon red pepper flakes

1 teaspoon fresh ginger, finely chopped

2 medium carrots, thinly sliced

1/2 medium head of cabbage, thinly sliced

1/4 cup green onions, thinly sliced

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning preparation.

  2. Bring 4 cups of water to a rolling boil in a medium saucepan over high heat.

  3. Add the ramen noodles to the boiling water, cover the pot with a lid, and immediately remove it from the heat. Do not use the seasoning packets included with the noodles.

  4. Let the noodles soak covered for one minute until they are tender.

  5. Drain the noodles in a colander and set aside.

  6. In a small saucepan, combine the peanut butter, soy sauce, and 1/2 cup of water.

  7. Heat the peanut sauce mixture over low heat, stirring constantly until it becomes smooth and well blended. Remove from heat and set aside.

  8. Heat the vegetable oil in a large skillet or wok over medium-high heat until it is hot and shimmering.

  9. Add the chicken strips to the hot oil and cook, stirring occasionally, for 3 to 5 minutes until the chicken is no longer pink in the center (internal temperature should reach 165°F).

  10. Add the red pepper flakes, ginger, and sliced carrots to the skillet. Stir-fry for 2 to 3 minutes until the carrots begin to soften.

  12. Stir in the sliced green onions, cooked noodles, and peanut sauce into the skillet with the vegetables and chicken.
