Niku Miso is a rich, umami-packed Japanese condiment made from two types of miso, ground pork, shiitake mushrooms, ginger, and scallions, bound together with egg yolks and sake into a thick, spreadable paste. This savory-sweet sauce is traditionally served alongside rice, vegetables, or as a flavoring agent in various Japanese dishes. The pork and vegetables are caramelized until deeply browned before being folded into the silky miso base, creating complex layers of flavor.

Ingredients

1/2 cup yellow miso

2 tablespoons hatcho miso

2 egg yolks

1/3 cup granulated sugar

1/2 cup sake

1 tablespoon vegetable oil

60 grams fresh shiitake mushrooms, finely minced

20 grams scallion white parts, finely minced

15 grams fresh ginger, finely minced

150 grams lean ground pork

2 tablespoons toasted sesame seeds

Directions

  1. Combine the yellow miso, hatcho miso, egg yolks, granulated sugar, and sake in a blender or food processor. Blend until the mixture is completely smooth and well incorporated, about 30 seconds to 1 minute. Set the miso sauce aside.

  2. Heat the vegetable oil in a large frying pan over medium heat until shimmering. Add the minced shiitake mushrooms, scallion whites, and ginger. Sauté, stirring frequently, for 5 to 7 minutes until the vegetables are well browned and beginning to caramelize at the edges.

  3. Increase the heat to medium-high and add the ground pork to the pan. Using a spatula, break up the meat into small, fine crumbles as it cooks. Continue stirring and breaking up the pork for 4 to 5 minutes until it is mostly cooked through with no large pieces remaining.

  4. Reduce the heat to low and pour the prepared miso sauce into the pan with the cooked pork and vegetables. Stir constantly with a spatula for 5 to 8 minutes until the mixture becomes thick and glossy. The niku miso is ready when you can drag the spatula across the pan and the mixture does not flow back into the gap, indicating it has reached the proper consistency.

  5. Remove the pan from heat and stir in the toasted sesame seeds until evenly distributed. Transfer the niku miso to a serving bowl or storage container. Allow it to cool before serving with rice, vegetables, or as directed in your recipe.
