Ingredients

2 chicken breasts, cut into bite-size pieces

½ small baguette, cut into bite-size cubes

4 tablespoons olive oil, divided

1 tablespoon balsamic vinegar

150 grams mixed salad leaves

250 grams cooked beetroot, cut into bite-size pieces

100 grams goat cheese, crumbled

Salt and freshly ground black pepper to taste

Directions

  1. Preheat your oven to 400°F (200°C). Arrange the bite-size chicken pieces and baguette cubes on a shallow roasting pan. Drizzle with 2 tablespoons of olive oil and toss gently to coat everything evenly. Season with salt and pepper to your taste.

  2. Place the pan in the preheated oven and roast for 15 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through, and the bread cubes are golden brown and crispy.

  3. While the chicken and bread are roasting, prepare the vinaigrette by whisking together the remaining 2 tablespoons of olive oil and the balsamic vinegar in a small bowl. Set aside.

  4. Divide the mixed salad leaves evenly between two serving plates or bowls. Distribute the cooked beetroot pieces over the greens on each plate.

  5. Remove the roasted chicken and bread from the oven. Immediately scatter the warm chicken and croutons over the salad greens and beetroot. Top with the crumbled goat cheese.

  6. Drizzle the balsamic vinaigrette over the warm salad and serve immediately while the chicken and bread are still warm.
