Ingredients

1 1/3 cups cooked black beans, mashed or low-sodium canned

1 teaspoon canola oil

2 tablespoons chopped onion

1/2 cup chopped tomatoes

4 corn tortillas

1/2 cup fresh tomato salsa

4 tablespoons non-fat plain yogurt

2 tablespoons chopped fresh cilantro

Directions

  1. Thoroughly wash your hands with soap and warm water.

  2. In a bowl, mash the cooked black beans with the canola oil until your desired consistency is reached. Stir in the chopped onion and chopped tomatoes and mix well.

  3. Dampen two white paper towels with water until slightly moist. Place the corn tortillas between them and microwave on high for 15 seconds to warm and soften.

  4. Divide the bean mixture evenly among the four warm tortillas, placing it in the center of each one.

  5. Fold each tortilla over the filling first on two opposite sides, then fold the remaining sides to create an enclosed burrito packet.

  6. Arrange the folded burritos seam-side down on a microwave-safe plate. Spoon the fresh tomato salsa evenly over the top of each burrito.

  7. Microwave on high for 15 seconds until the burritos are heated through.

  8. Transfer to serving plates and top each burrito with 1 tablespoon of yogurt and 1/2 tablespoon of chopped cilantro. Serve immediately.
