¼ cup champagne vinegar
¼ cup fresh lemon juice
½ Zest from ½ lemon
1 tablespoon fresh lime juice
½ cup freshly squeezed orange juice from a navel orange
½ Zest from ½ orange
2 tablespoons clover honey
2 tablespoons finely minced shallots
1 tablespoon chopped fresh flat leaf parsley
1 teaspoon gray sea salt
½ teaspoon freshly ground black pepper
1½ cups good quality extra virgin olive oil
Directions
In a blender, combine the champagne vinegar, fresh lemon juice, lemon zest, lime juice, orange juice, orange zest, honey, minced shallots, chopped parsley, sea salt, and black pepper.
Blend the mixture on medium speed until smooth and well combined, about 1-2 minutes.
With the blender running on low speed, slowly drizzle in the extra virgin olive oil in a thin, steady stream. This gradual incorporation will create an emulsified dressing with proper consistency.
Continue blending until the dressing reaches your desired texture and the oil is fully incorporated, approximately 1-2 minutes.
Taste and adjust seasoning if needed. Transfer to a glass container and refrigerate. The dressing will keep for up to one week when stored in the refrigerator.
