Ingredients
2 tablespoons vegetable oil
1 boneless pork loin, cut into ½-inch thick slices
2 stalks celery, chopped into ¼-inch pieces
1 medium onion, diced
½ teaspoon dried thyme leaves
1 can (10.5 oz) condensed cream of celery soup
¼ cup water
3 to 4 cups hot cooked long-grain white rice
Directions
Heat the vegetable oil in a large skillet over medium-high heat until shimmering.
Add the pork loin slices to the hot skillet and sear for 4–5 minutes per side, turning once, until golden brown and cooked through to an internal temperature of 145°F. Transfer the cooked pork to a plate.
In the same skillet, add the diced onion and chopped celery. Sauté for 5–6 minutes over medium heat, stirring occasionally, until the vegetables are softened and lightly caramelized.
Sprinkle the dried thyme over the vegetables and stir to combine, cooking for 30 seconds until fragrant.
Pour the condensed cream of celery soup and water into the skillet, stirring well to incorporate and break up any lumps.
Return the cooked pork to the skillet and reduce the heat to medium. Simmer for 3–5 minutes, stirring gently, until the sauce is smooth and heated through.
Serve the creamy pork mixture over hot cooked white rice.
