2 medium tomatoes, chopped

1 medium onion, coarsely chopped

2 garlic cloves, minced

Kosher salt

Black pepper

1/3 cup grapeseed oil

2 cups long-grain white rice

1 cup chicken stock or low-sodium broth

Directions

  1. Pulse the chopped tomatoes, coarsely chopped onion, and minced garlic together in a food processor until the mixture reaches a smooth, sauce-like consistency.

  2. Heat the grapeseed oil in a large skillet or heavy-bottomed pot over medium-high heat.

  3. Add the rice to the hot oil and stir constantly for 2-3 minutes, allowing it to toast and become golden. This step develops the rice's flavor and helps prevent it from becoming mushy.

  4. Carefully pour the tomato-onion-garlic mixture into the toasted rice, stirring well to combine. Cook for 1-2 minutes to allow the flavors to meld.

  5. Add the chicken stock to the pan and stir once more. Season with kosher salt and black pepper to taste.

  6. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover tightly with a lid, and simmer for 25-30 minutes until the rice is tender and has absorbed all the liquid.

  7. Remove from heat and let stand covered for 5 minutes, then fluff the rice with a fork before serving.
