Ingredients

1¼ cup unroasted unsalted pumpkin seeds (pepitas)

3 tbsp brown sugar

3 tbsp butter, melted and cooled

1½ tsp salt

¼ tsp cayenne pepper

¼ tsp ground cumin

Directions

  1. Preheat your oven to 350°F (177°C).

  2. Line a baking sheet with parchment paper to prevent sticking.

  3. In a small bowl, combine the pumpkin seeds, brown sugar, melted butter, salt, cayenne pepper, and ground cumin. Stir until all seeds are evenly coated with the spiced butter mixture.

  4. Spread the coated pumpkin seeds in a single layer on the prepared baking sheet.

  5. Bake for 10 minutes, stirring the seeds halfway through at the 5-minute mark to ensure even browning and caramelization.

  6. Remove from the oven when the seeds are golden brown and fragrant. Spread them on a clean surface or back on the baking sheet to cool completely. As they cool, they will crisp up and become crunchy.
