Chocolate Donuts with Fruit and Milk Sauce

Ingredients
3 1/2 cups cake flour
1/2 cup unsweetened cocoa powder
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 eggs, room temperature
1 cup sugar
3 tbsp butter, melted
1 cup milk
2 tsp vanilla extract
vegetable oil for frying (3 inches deep)
1 cup sugar for coating
3 frozen fruit and milk bars, melted
Directions
Sift together the cake flour, cocoa powder, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl. Set aside.
In a stand mixer with the paddle attachment, beat the eggs until foamy. Gradually add 1 cup of sugar while continuing to beat until the mixture becomes light yellow and creamy in texture, about 2-3 minutes.
In a small bowl, combine the melted butter, milk, and vanilla extract. With the mixer running, add this mixture to the egg and sugar mixture.
Add the sifted dry ingredients to the wet mixture and stir until just combined. Do not overmix.
Cover the bowl and refrigerate the batter for 1 hour.
Generously flour a work surface. Turn the chilled dough onto the floured surface and dust the top with additional flour. Pat the dough out until it is 1/4 inch thick.
Line a baking sheet with wax paper and dust it with flour. Using a 1-inch round cutter, cut out small donut holes and place them on the prepared baking sheet.
Let the donut holes sit at room temperature for 10 minutes.
Heat the vegetable oil in a large saucepan to 375°F.
Carefully place 6 donut holes into the hot oil at a time to maintain a consistent oil temperature. Fry for 30 seconds, then remove with a slotted spoon and drain on a paper towel-lined rack.
While the donut holes are still hot, roll them in the remaining 1 cup of sugar to coat all sides. Transfer to a serving plate and continue frying the remaining batches in the same manner.
To serve, drizzle a small amount of the melted frozen fruit and milk bars onto a serving dish, arrange 3 donut holes on top, and drizzle more of the sauce over them.
