Ingredients

1.5 lbs smoked pork sausage, sliced into 1/4-inch rounds

2.5 lbs russet potatoes, peeled and cut into 1-inch cubes

1 large yellow onion, thinly sliced

1 (10 oz) can cream of mushroom soup, undiluted

3/4 teaspoon Creole seasoning

Directions

  1. Lightly coat the interior of a 5-6 quart slow cooker with cooking spray, or insert a slow cooker liner for easier cleanup.

  2. Add the sliced sausage, cubed potatoes, and sliced onion to the prepared slow cooker.

  3. Pour the undiluted cream of mushroom soup over the sausage and vegetables, then sprinkle the Creole seasoning evenly over the top.

  4. Stir all ingredients together until the soup is distributed throughout and seasonings are evenly mixed.

  5. Cover and cook on low heat for 7 to 8 hours, until the potatoes are very tender and the sausage is heated through. The mixture will be creamy and well-combined.

  6. Serve hot directly from the slow cooker, spooning the creamy sauce over each portion.
