Ingredients

1 lb Ground beef (85% lean)

10 oz Frozen chopped spinach

8 oz Cream cheese

1 Large egg

6 oz Medium onion, chopped

1 tablespoon Minced garlic

1 tablespoon Olive oil

1 teaspoon Kosher salt

¼ teaspoon Black pepper

4 oz Shredded part skim mozzarella cheese

2 tablespoon Grated Parmesan cheese

Directions

  1. Preheat the oven to 350°F. Lightly coat an 8-inch square baking dish (or any 2-quart baking dish) with cooking spray. Microwave the frozen spinach according to package directions until fully thawed.

  2. Transfer the thawed spinach to a colander. Using the back of a large spoon, press and squeeze the spinach repeatedly to remove as much liquid as possible. Set aside.

  3. Heat the olive oil in a large skillet over medium-high heat for about 3 minutes until shimmering.

  4. Add the ground beef, chopped onion, and ½ teaspoon kosher salt to the skillet. Using a wooden spoon, break the beef into small crumbles while stirring frequently. Cook for about 7 minutes, or until the onion becomes soft and the beef is no longer pink.

  5. Place a colander over a bowl and carefully pour the beef mixture into the colander to drain excess fat and liquids. Return the drained beef mixture to the skillet.

  6. Add the minced garlic to the beef mixture and cook, stirring constantly, for 30 seconds until fragrant. Set the skillet aside off the heat.

  7. Place the cream cheese in a microwave-safe bowl and microwave for 40 seconds to soften. Stir with a fork until smooth and creamy.

  8. Add the egg, black pepper, and remaining ½ teaspoon kosher salt to the softened cream cheese. Whisk vigorously with a wire whisk until the mixture is smooth and well combined.

  9. Add the drained spinach to the cream cheese mixture and fold together with a spatula until evenly blended.

  10. Spread the spinach and cream cheese mixture evenly across the bottom of the prepared baking dish. Top with the beef mixture, spreading it in an even layer. Sprinkle the shredded mozzarella and grated Parmesan cheese uniformly over the top.

  11. Bake for 30 minutes, or until the cheese is bubbly and golden brown on top.

  12. Remove from the oven and let stand for 10 minutes before cutting and serving.
