Smoked Salmon and Potato Salad

Ingredients
2 pounds fingerling or new potatoes (red or yellow waxy variety), sliced into 1/2-inch coins
Kosher salt
3/4 cup sour cream or crème fraîche
1 tablespoon fresh lemon juice
3 ounces smoked salmon, finely chopped
1/4 cup finely chopped fresh herbs (parsley, chives, tarragon, or scallions)
Freshly ground black pepper
Directions
Place the sliced potatoes in a large pot and cover with cold water. Add a generous pinch of kosher salt and bring to a boil over medium-high heat.
Reduce heat to medium and simmer the potatoes for 12 to 15 minutes, until they are just tender when pierced with a fork but still hold their shape. Drain well and transfer to a bowl to cool slightly.
In a small bowl, whisk together the sour cream and lemon juice until smooth. Season lightly with kosher salt and freshly ground black pepper to taste.
Once the potatoes have cooled to room temperature, gently fold in the sour cream mixture until the potatoes are evenly coated.
Fold in the chopped smoked salmon and fresh herbs, being careful not to break up the potatoes or salmon. Taste and adjust seasoning with additional salt and pepper as needed.
Serve immediately or chill until ready to serve. The salad is best enjoyed within a few hours of preparation.
