These flavorful fajita-inspired burgers combine tender ground chicken patties with sautéed peppers and onions that have been cooked until sweet and slightly charred. Ingredients

1 lb ground chicken breast

½ cup Panko bread crumbs

1 egg

1 tsp garlic powder

1 Tbsp hot sauce

¼ tsp salt

¼ tsp black pepper

2 Tbsp olive oil

1 sweet onion, halved and thinly sliced

2 bell peppers, thinly sliced

4 slices part-skim cheddar or colby jack cheese

1 avocado, mashed

4 hamburger buns

Directions

  1. In a medium bowl, combine the ground chicken breast, Panko bread crumbs, egg, garlic powder, hot sauce, salt, and black pepper. Mix gently with your hands until all ingredients are evenly incorporated. Form the mixture into four patties, each approximately 5 inches in diameter. Preheat your grill to 400°F.

  2. Once the grill is hot, place the chicken patties on the grates and cook for 4–5 minutes per side, flipping once halfway through. The burgers are done when they reach an internal temperature of 165°F (use a meat thermometer inserted into the thickest part). Transfer to a plate.

  3. While the burgers are grilling, heat the olive oil in a large skillet over medium-high heat. Add the sliced sweet onion and sauté for 4–5 minutes, stirring occasionally, until softened and beginning to turn golden.

  4. Add the sliced bell peppers to the skillet and continue cooking for 15–20 minutes, stirring occasionally, until the peppers are very tender and the mixture is caramelized with light golden-brown spots.

  5. In a small bowl, mash the avocado with a fork until creamy, then season to taste with additional salt and black pepper if desired.

  6. To assemble each burger, spread a portion of the mashed avocado on the bottom half of a hamburger bun. Place a cooked chicken patty on top, add one slice of cheese, and top with a generous portion of the caramelized pepper and onion mixture. Crown with the top bun and serve immediately.
