Ingredients
5-ounce bottle hot sauce
4 tablespoons unsalted butter
1 rotisserie chicken, cut into pieces
½ cup sour cream
4 ounces blue cheese, crumbled
¼ teaspoon kosher salt
⅛ teaspoon black pepper
1 small head iceberg lettuce, quartered and cored
Directions
In a large skillet over medium heat, melt the unsalted butter until foaming.
Add the hot sauce to the melted butter and stir until fully combined. Warm the sauce for about 1 minute.
Add the rotisserie chicken pieces to the skillet and toss continuously until the chicken is evenly coated with the buffalo sauce, about 2–3 minutes.
In a small bowl, whisk together the sour cream and crumbled blue cheese. Season with kosher salt and black pepper to taste.
Arrange the quartered and cored iceberg lettuce on a serving plate or individual plates.
Top the lettuce with the hot buffalo chicken and drizzle with the blue cheese dressing. Serve immediately.
Comments
This is a fast weeknight winner that hits all the Charlotte basics: rotisserie chicken from any major grocery chain, butter and hot sauce in every pantry, and blue cheese dressing ingredients available everywhere from Food Lion to Walmart. The 15-minute estimate is honest—it's just heating the sauce, shredding or chopping chicken, and assembling—making it a real option for a busy night. Cost per serving runs around $2 to $2.50 because rotisserie chicken is already cooked and hot sauce is cheap; blue cheese and sour cream are the only minor upcharges. The only minor friction is that it doesn't improve as leftovers, so this is a same-night dish, and iceberg lettuce as the bed feels thin for four adults unless you're serving it as a side or appetizer rather than a main.
