Spring Pea and Arugula Matzo Brei

Ingredients
5 sheets egg matzo, broken into 3-inch squares
1 cup warm water
2 cups packed arugula
1 small garlic clove, minced
1 cup English peas, blanched
1 cup snow peas, blanched and julienned
5 eggs, lightly beaten
1½ teaspoons kosher salt
1 teaspoon sugar
2 Zest of 2 lemons
¼ teaspoon red pepper flakes
1 tablespoon butter
¼ cup crème fraiche
Directions
Break the egg matzo sheets into 3-inch squares and place them in a large bowl. Pour the warm water over the matzo and let it soak for 2–3 minutes until softened but still holding its shape. Drain any excess liquid.
In a small bowl, whisk together the beaten eggs with the kosher salt, sugar, red pepper flakes, and lemon zest.
Mince the garlic clove finely and set aside.
Blanch the English peas and snow peas if not already done. Once blanched, julienne the snow peas into thin strips.
Heat the butter in a large skillet or wide sauté pan over medium heat.
Add the minced garlic to the hot butter and cook for about 30 seconds until fragrant.
Add the softened matzo squares to the pan, stirring gently to coat with the butter.
Pour the egg mixture over the matzo and cook for 3–4 minutes, stirring occasionally, until the eggs begin to set.
Add the arugula, English peas, and julienned snow peas to the pan, folding them gently into the matzo and eggs. Continue cooking for another 3–4 minutes, stirring occasionally, until the eggs are fully cooked and no liquid remains. The internal temperature of the eggs should reach 160°F.
Divide the matzo brei among serving plates and top each portion with a dollop of crème fraiche. Serve immediately.
