Ingredients

1 whole wheat pita bread

2 tablespoons low-sodium tomato sauce

1 slice part-skim mozzarella cheese

1/2 cup mixed fresh vegetables (choose 2: bell peppers, mushrooms, broccoli, red onion, or spinach), chopped or sliced

Directions

  1. Wash your hands thoroughly with soap and warm water.

  2. Carefully slice the pita bread around the outer edge to separate the two halves, creating a flat pocket.

  3. Spread the tomato sauce evenly over the inner surface of one pita half.

  4. Distribute your choice of two fresh vegetables over the sauce, keeping the filling toward the center.

  5. Place the mozzarella cheese slice directly over the vegetables and sauce.

  6. Top with the second pita half, pressing gently to bring the two halves together into a sandwich.

  7. Place the pita pocket on a microwave-safe plate and microwave on high power for 35 to 45 seconds, until the cheese is completely melted and warm.

  8. Remove from the microwave, allow to cool for 1 to 2 minutes, slice in half crosswise, and serve.
