Ingredients

2 boneless, skinless chicken breasts

1/2 teaspoon vegetable oil

1 teaspoon minced garlic

1/4 teaspoon salt

1/4 teaspoon black pepper

2/3 tablespoon taco seasoning or chili powder (optional)

1 green bell pepper, sliced

1 medium onion, sliced

4 soft flour tortillas, 6-inch

2 cups fresh romaine lettuce, thinly sliced

1/2 cup diced fresh tomatoes

1 cup fresh tomato salsa

1 tablespoon chopped fresh cilantro or parsley (optional)

Directions

  1. Place the chicken breasts in a large bowl. Add the vegetable oil, minced garlic, salt, black pepper, and taco seasoning or chili powder if using. Toss gently to coat the chicken evenly with the seasonings.

  2. Cover the bowl with plastic wrap and refrigerate for about 30 minutes to allow the flavors to infuse.

  3. While the chicken chills, heat a skillet over medium heat. Add the sliced green pepper and onion, cooking them for approximately 12 minutes, stirring occasionally, until they are tender and lightly browned. Transfer to a plate and set aside.

  4. Heat the same skillet over medium heat (adding a small amount of oil if needed). Place the seasoned chicken breasts in the skillet.

  5. Cook the chicken for 10 to 15 minutes on the first side until it begins to brown, then flip and cook the other side for another 10 to 15 minutes. The chicken is done when it reaches an internal temperature of 165°F (74°C) when measured with a meat thermometer in the thickest part.

  6. Remove the cooked chicken from the skillet and place it on a clean plate. Let it rest for 5 minutes.

  7. Once cooled, slice the chicken breasts into thin strips.

  8. Warm the soft tortillas briefly in the skillet or over a gas flame to make them more pliable.

  9. To assemble each taco, place a warm tortilla on a plate and layer the chicken strips down the center.

  10. Top the chicken with the sautéed peppers and onions, followed by the fresh romaine lettuce and diced tomatoes.

  11. Spoon the fresh tomato salsa over the top and garnish with cilantro or parsley if desired. Serve immediately.
