1 jar (12 ounces) creamy cashew butter

1 cup chocolate chips

2 tablespoons unsweetened cocoa powder

1 large egg

1/4 cup honey

1 tablespoon pure vanilla extract

2 cups shredded zucchini

Directions

  1. Preheat your oven to 350°F. Line a 9-by-9-inch brownie pan with parchment paper, allowing the edges to hang over the sides for easy removal later.

  2. In a large mixing bowl, combine the shredded zucchini, cashew butter, honey, and egg. Beat on medium speed for approximately 30 seconds until the mixture is smooth and well blended.

  3. Add the baking soda, cocoa powder, and vanilla extract to the bowl. Continue beating until all dry ingredients are fully incorporated and no streaks of cocoa remain.

  4. Using a spatula or wooden spoon, gently fold the chocolate chips into the batter until evenly distributed throughout.

  5. Pour the batter into the prepared brownie pan, spreading it evenly with a spatula.
