Ingredients
1 cup Raw brazil nuts, finely chopped
1 cup Pitted medjool dates
¼ cup Rolled oats (certified gluten-free if needed)
1 tablespoon Water
1 tablespoon Fresh orange zest for the base
¼ cup Coconut oil
¼ cup Raw honey or pure maple syrup
¼ cup Natural almond butter
¼ cup Raw cocoa powder
12 whole Whole raw brazil nuts for topping
1 tablespoon Fresh orange zest for garnish
Directions
Add the chopped brazil nuts, pitted medjool dates, rolled oats, water, and the first tablespoon of orange zest to a food processor. Blend until the mixture becomes sticky and well combined, with no large date or nut chunks remaining.
Press a heaping tablespoon of the nut-date mixture firmly into each cup of a 12-cup muffin tin, filling each cup about halfway. Place the filled muffin tin in the freezer while you prepare the chocolate topping.
Pour coconut oil, honey (or maple syrup), and almond butter into a medium saucepan. Heat over low heat, stirring constantly, until the mixture is melted, smooth, and fully combined—do not boil.
Remove the saucepan from heat. Add the raw cocoa powder and stir vigorously until the mixture is homogenous with no streaks of cocoa remaining.
Remove the muffin tin from the freezer. Carefully pour or spoon 1 tablespoon of the warm fudge mixture over the nut-date base in each cup. Top each cup with one whole brazil nut, pressing it gently into the chocolate layer.
Return the muffin tin to the freezer and allow the fudge cups to set for at least 15 minutes, until the chocolate layer has firmed but the cups are still creamy inside.
Remove the cups from the muffin tin and garnish each with a light sprinkle of the remaining orange zest. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
Comments
Brazil nuts and medjool dates require a second stop at Harris Teeter or Whole Foods—neither Food Lion nor Walmart reliably stocks them fresh year-round, adding real friction to a weeknight plan. The cost per serving runs $1.50–$2.00 driven by the brazil nuts and almond butter; this is a treat, not a budget dessert. The stated 40 minutes ignores the setting time in the fridge (at least 2–3 hours), making this a make-ahead dish for a weekend or a day ahead. The texture and flavor land beautifully—a sophisticated, no-bake treat that holds well for a week—but it rewards planning, not impulse cooking.
