Cheesy Garlic Fries in Foil

Ingredients
1 pound Red potatoes, cut into 8 long wedges
2 tablespoons Olive oil
4 cloves Garlic cloves, minced
½ teaspoon Red pepper flakes
Kosher salt, to taste
Freshly ground black pepper, to taste
1 cup Shredded sharp cheddar cheese
2 tablespoons Sour cream
2 tablespoons Fresh chives, chopped
Directions
Preheat your oven to 400°F. Line a baking sheet with aluminum foil. In a small bowl, combine the olive oil, minced garlic, red pepper flakes, kosher salt, and black pepper. Mix well until the garlic is evenly distributed throughout the oil.
Arrange the potato wedges on the prepared foil-lined baking sheet. Fold up all four sides of the foil to create a shallow base. Pour the garlic-infused oil mixture evenly over the potatoes, tossing gently to coat all sides. Fold the foil sides over the potatoes to completely seal the packet.
Place the sealed foil packet into the preheated oven and bake for 30 to 35 minutes, until the potatoes are tender when pierced with a fork.
Carefully open the foil packet and sprinkle the shredded cheddar cheese evenly over the hot potatoes. Return the packet to the oven and switch to the broiler setting. Broil for 2 to 3 minutes, until the cheese is completely melted and the potatoes begin to brown and crisp at the edges.
Remove from the oven and transfer to a serving dish. Serve immediately, garnishing with sour cream and fresh chopped chives as desired.
