Ingredients

2 bunches salad onions, trimmed

270 g small mixed tomatoes

50 g watercress

Directions

  1. Heat a large non-stick skillet over high heat until very hot. Trim the salad onions and cut them in half lengthwise. Once the pan is smoking, place the onion halves cut-side down and cook for 2½ minutes until deeply charred and caramelized. Flip and cook the rounded side for another 2½ minutes until tender throughout. Transfer to a serving platter.

  2. Halve the mixed tomatoes. Working carefully, place them cut-side down in the same hot pan and cook for 30 seconds to 1 minute until the surface is lightly caramelized and softened. Add to the platter with the onions.

  3. Arrange the watercress on the serving platter alongside the charred onions and tomatoes. Season the vegetables lightly with salt and pepper to taste. Serve immediately while the vegetables are still warm.
