Ingredients

1 tablespoon olive oil or unsalted butter

1 medium sweet onion, finely diced

4 scallions, thinly sliced

3-4 garlic cloves, minced

1 large egg

1 pound ground chicken

10 ounces Mexican soft chorizo, removed from casing

1 cup finely crushed tortilla chips (preferably unsalted)

1 teaspoon smoked paprika

1/2 teaspoon salt (adjust based on chip saltiness)

Directions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.

  2. Heat the olive oil or butter in a large skillet over medium heat. Add the diced sweet onion and cook for about 3-4 minutes until softened and fragrant.

  3. Add the minced garlic to the skillet and stir constantly for about 1 minute until aromatic. Remove from heat and let cool slightly.

  4. In a large mixing bowl, combine the ground chicken, chorizo (broken into small pieces), crushed tortilla chips, egg, smoked paprika, and salt. Add the cooled onion and garlic mixture.

  5. Fold in the sliced scallions gently into the meat mixture until just combined. Do not overmix.

  6. Roll the mixture into approximately 36 meatballs of equal size, about 1.5 inches in diameter. Arrange them on the prepared baking sheet in a single layer.

  7. Bake the meatballs for 18-20 minutes until they reach an internal temperature of 165°F and are golden brown.

  8. Remove from the oven and let cool for 2-3 minutes before serving.
