Ingredients

11 ounces Mixed salad greens (lettuce, arugula, chicory, and radicchio), well-rinsed and patted dry

½ bunch Radishes, thinly sliced

2 thirds cup Plain yogurt

1 tablespoon Scallions (spring onions), chopped

1 tablespoon Fresh lemon juice

Salt, to taste

Black pepper, to taste

Directions

  1. In a small bowl, whisk together the plain yogurt, chopped scallions, and fresh lemon juice until well combined.

  2. Season the yogurt dressing with salt and black pepper to taste, adjusting the lemon juice if needed for your preferred level of tartness.

  3. Place the rinsed and dried mixed salad greens in a large serving bowl.

  4. Arrange the thinly sliced radishes over the greens.

  5. Just before serving, drizzle the yogurt dressing over the salad and gently toss to coat all the greens and radishes evenly.

  6. Divide among serving plates and serve immediately while the greens are still crisp.

Grocery List Plus Editorial Staff4.5

Every ingredient is available year-round at any Charlotte chain, with radishes and scallions stocked at Harris Teeter, Food Lion, Kroger, and Walmart. At current prices—mixed greens $3–4, radishes $0.50–1, yogurt $2–3, scallions $1, lemon $0.50—the cost runs $1.50–2 per serving, making this genuinely cheap. The stated 15 minutes is honest; slicing radishes and whisking yogurt dressing takes just that. It's a light side dish or lunch that doesn't reheat well, so plan it as a same-night serve, and it works best as part of a larger meal rather than standing alone for a family dinner.
