Ingredients

2 tbsp Olive oil

1 lb Large shrimp, peeled and deveined

1 cup Onion, finely chopped

½ tsp Dried basil leaves

½ tsp Dried oregano leaves

8 oz Linguine pasta

¼ cup Grated Parmesan cheese

Directions

  1. Bring a large pot of salted water to a rolling boil. Add the linguine and cook according to package directions until al dente, about 9-11 minutes. Drain and set aside, reserving 1/4 cup of pasta water.

  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.

  3. Add the chopped onion to the hot oil and sauté for 2-3 minutes, stirring frequently, until the onion becomes translucent and fragrant.

  4. Stir in the dried basil and oregano, cooking for about 30 seconds until the herbs release their aroma.

  5. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until they turn pink and opaque throughout. Do not overcook; shrimp should reach an internal temperature of 145°F.

  6. Add the cooked linguine to the skillet with the shrimp and toss gently to combine. If the mixture seems dry, add the reserved pasta water a little at a time to create a light, silky sauce.

  7. Remove from heat and divide among four serving plates. Top each portion with the grated Parmesan cheese and serve immediately.
