Toasted Cumin Sauce for Fish
Recipe GLPR5a306c679ec66b
A vibrant, aromatic sauce made by gently toasting cumin seeds in warm olive oil, then infusing the oil with garlic, oregano, and warm spices. Finished with bright citrus juice for a refreshing, savory-tangy complement to grilled seafood. This Mediterranean-inspired sauce captures warm spice notes while the orange and lime juices bring brightness and acidity. Best served warm or at room temperature over fish.

Ingredients
1/4 cup olive oil
4 teaspoons cumin seeds
12 cloves garlic, pureed or finely minced
2 teaspoons dried oregano
2 teaspoons sea salt
1 teaspoon coarsely ground black pepper, or to taste
1½ orange Juice of 1 1/2 oranges, freshly squeezed
1½ lime Juice of 1 1/2 limes, freshly squeezed
Directions
Pour the olive oil into a small saucepan and place over medium heat. Once the oil is warm, add the cumin seeds and toast for 1 to 2 minutes, stirring occasionally, until fragrant and the seeds begin to darken slightly.
Add the minced garlic and cook for about 1 minute, stirring constantly, until the garlic becomes fragrant and starts to soften.
Stir in the dried oregano, sea salt, and coarsely ground black pepper. Cook for 2 to 3 minutes more over medium heat, stirring gently, to allow the spices to bloom and infuse into the warm oil. Do not allow the mixture to boil or brown too heavily.
Remove the pan from heat and immediately pour in the freshly squeezed orange juice and lime juice. Stir well to combine all ingredients. The sauce is ready to use warm or at room temperature.
Serve the sauce immediately drizzled over grilled or pan-seared fish such as halibut, salmon, or other firm-fleshed seafood. The sauce can be refrigerated in an airtight container for up to 3 days; gently reheat or serve chilled as desired.
Comments
Every ingredient is a pantry staple or produce aisle item at any Charlotte grocery chain—no special stops required. At roughly $2–2.50 per serving, it's efficient, driven by the need for fresh citrus but offset by the modest quantity of oil and spices. The stated 16 minutes is honest for toasting cumin, mincing garlic, and emulsifying; assume closer to 20 if you're also prepping and cooking the fish. This is a bare-bones sauce that demands a good fish fillet to shine, reheats gently, and serves as a companion dish rather than a complete meal on its own.
