Ingredients
8 strips thick-cut bacon strips
1 lb ground beef
1 medium yellow onion, chopped
3 cloves garlic cloves, chopped
1 tsp salt
1 tsp ground black pepper
1 tsp garlic powder
2 tbsp Worcestershire sauce
12 oz softened cream cheese
1 cup sour cream
2 tbsp ketchup
2 tbsp yellow mustard
10 oz canned diced tomatoes with green chilies
1½ cup shredded cheddar cheese
1 cup shredded mozzarella cheese
Directions
Heat a large skillet over medium heat. Once hot, add the ground beef and break it apart with a spoon as it cooks. Season with salt, pepper, garlic powder, and Worcestershire sauce. Cook until no longer pink (beef must reach 160°F internally). Remove to a plate and set aside.
Add the bacon strips to the same skillet and cook until crispy, about 5-7 minutes. Once cool enough to handle, chop the bacon into bite-sized pieces.
Drain most of the fat from the skillet, leaving about 1 tablespoon. Add the chopped onion and stir to scrape up the browned bits from the bottom of the pan. Cook for 1-2 minutes until softened.
Add the chopped garlic and stir constantly for 30 seconds to 1 minute to prevent burning. Remove the skillet from heat.
In a mixing bowl, combine the cream cheese and sour cream, stirring until most lumps are removed.
Stir the ketchup, mustard, and diced tomatoes with chilies into the cream cheese mixture.
Transfer the cooked ground beef to the crock pot insert. Add the bacon, onion, and garlic to the crock pot as well.
Pour the cream cheese mixture over the beef and stir well to combine.
Stir in the mozzarella cheese and 1 cup of the cheddar cheese until evenly distributed.
Sprinkle the remaining ½ cup of cheddar cheese over the top as a garnish.
Cover the crock pot and cook on low for 2 to 3 hours, until the dip is warmed through and bubbly. Stir occasionally to ensure even heating.
Comments
Every ingredient is a pantry staple or common item at Harris Teeter, Food Lion, Kroger, Walmart, or ALDI—no special trips needed. At roughly $12–14 for a crock pot that feeds eight to ten as an appetizer, the cost per serving lands around $1.40–1.75, driven by the bacon and ground beef; use store-brand cheese and sour cream to stay at the lower end. The stated prep time is honest for browning meat and mixing, though plan an extra hour of crock-pot time if the recipe doesn't specify it. This is a true crowd-pleaser that handles a party or casual gathering without fussiness, keeps warm in the pot all evening, and reheats perfectly for leftovers—the kind of dish that disappears fast and tastes just as good the next day on crackers or bread.
