500 g low-fat curd cheese
3 egg whites
3 dessert spoons semolina
3 to 4 dessert spoons white sugar
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 cup raisins
Directions
Preheat your oven to 190°C (375°F) and line a square or round baking tray with parchment paper.
Place the low-fat curd cheese in a large mixing bowl and press it gently with a fork to break up any large lumps and achieve a smoother consistency.
Add the egg whites to the curd and mix together thoroughly until well combined.
Stir in the semolina, white sugar, baking powder, and vanilla extract, mixing well to create a smooth, uniform batter. If you prefer a more textured cake, leave the mixture slightly crumbled rather than fully smooth.
Gently fold the raisins into the mixture, distributing them evenly throughout.
Pour the batter onto the prepared baking tray and spread it evenly. Bake for approximately 35-40 minutes until the top is golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and allow the cake to cool in the tray for a few minutes before serving.
