2 cups raw whole macadamia nuts

2 tbsp honey

4 tsp coconut oil, melted

½ tsp ground cinnamon

pinch sea salt

Directions

  1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper to prevent sticking.

  2. In a medium bowl, combine the melted coconut oil, honey, ground cinnamon, and sea salt. Stir with a wooden spoon or rubber spatula until the mixture is well blended and uniform.

  3. Add the raw macadamia nuts to the honey-coconut oil mixture. Toss and stir until all nuts are evenly coated with the sweetened oil mixture.

  4. Spread the coated nuts in a single, even layer on the prepared baking sheet. Avoid overcrowding.

  5. Place the baking sheet in the preheated oven and roast for 15 minutes, stirring occasionally to ensure even browning. The nuts are ready when they turn golden brown and smell fragrant. Watch carefully during the last few minutes to prevent burning.

  6. Remove the baking sheet from the oven and allow the roasted nuts to cool for 5 to 10 minutes at room temperature.

  7. Transfer the cooled roasted nuts to a food processor or high-powered blender. Process continuously, scraping down the sides as needed, until the nuts release their natural oils and break down into a smooth, creamy butter. This typically takes 3 to 5 minutes depending on your equipment.

  8. Once the nut butter reaches your desired smoothness, transfer it to a clean, airtight container. Store in a cool pantry or in the refrigerator for best results and extended shelf life.
