Ingredients
1 (15.5 ounce) can spinach, drained
2 cups cooked brown rice
3/4 cup low-fat shredded cheddar cheese
2/3 cup 1% milk
3 tablespoons softened butter
1 teaspoon salt, optional
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dried thyme
1/4 cup diced onion
Directions
Wash your hands thoroughly with soap and warm water before beginning to prepare the recipe.
Preheat your oven to 350°F (175°C). Wash your hands again with soap and warm water.
Open the can of spinach and drain it thoroughly in a colander to remove excess liquid, pressing gently with the back of a spoon to extract moisture.
In a large mixing bowl, combine the drained spinach, cooked brown rice, shredded cheddar cheese, milk, softened butter, salt (if using), Worcestershire sauce, dried thyme, and diced onion. Stir until all ingredients are evenly distributed.
Transfer the mixture to an 8x8-inch baking dish, spreading it in an even layer. (Alternatively, you may use a 9x13-inch baking dish for a thinner bake, though the 8x8-inch dish is recommended for better texture.)
Cover the baking dish tightly with aluminum foil and place it in the preheated 350°F oven.
Bake covered for 20 minutes.
Remove the foil and bake for an additional 5 minutes, or until the top is set and the mixture is heated through.
