Ingredients
3 eggs
1 cup all-purpose flour
1½ cups whole milk
⅛ tsp salt
butter for cooking
Directions
Crack the eggs into a large mixing bowl and add the flour, milk, and salt. Whisk vigorously until the mixture is completely smooth and forms a thin, pourable batter with no lumps.
Place a skillet or griddle over medium heat and add a small amount of butter, tilting and swirling to coat the surface evenly.
Once the butter is melted and the pan is hot, pour in a small ladleful of batter—about ¼ cup. Immediately tilt and rotate the skillet so the batter spreads into a thin, even circle covering most of the cooking surface.
Cook for 1 to 2 minutes until the bottom is light golden and the top appears set and dry. Using a thin spatula, gently flip the pancake and cook the other side for another 1 to 2 minutes until it is also lightly golden.
Transfer the cooked pannekake to a plate and repeat the process with the remaining batter, adjusting heat as needed to maintain a gentle, even cook without burning.
Serve the pannekaken warm with your choice of toppings such as jam, fresh berries, sliced fruit, warm syrup, or a light dusting of powdered sugar.
