Ingredients
22 oz waffle fries
2 tbsp vegetable oil
½ medium yellow onion, diced
½ lb ground beef
1 packet taco seasoning packet
¾ cup shredded Monterrey Jack cheese
¾ cup shredded cheddar cheese
1 medium ripe avocado, diced
1 large large tomato, seeds removed and diced
½ cup chopped green onion
sour cream for topping (optional)
Directions
Preheat your oven to 400°F. Spread the waffle fries in a single, even layer on a large greased baking sheet.
Heat the vegetable oil in a medium skillet over medium heat. Add the diced yellow onion and sauté until the onion becomes translucent, about 3-4 minutes.
Add the ground beef to the skillet, breaking it apart with a spoon or spatula as it cooks. Stir in the taco seasoning packet.
Continue cooking and stirring until the beef is completely cooked through and no pink remains, about 5-7 minutes. Drain any excess liquid from the beef mixture.
While the beef cooks, place the waffle fries in the oven and bake until golden and crispy, about 20-25 minutes. Once cooked, transfer the fries to a smaller baking sheet and spread them into a thicker layer, overlapping is fine.
Distribute the cooked beef evenly over the waffle fries. Combine both cheeses and sprinkle evenly over the beef.
Return the baking sheet to the oven and bake for 5-7 minutes until the cheese is melted and bubbly.
Remove from the oven and immediately top with the diced tomato, avocado, and green onion. Drizzle with sour cream if desired.
Serve hot right away.
Comments
The 45-minute stated time undersells the actual prep: frying waffle fries from frozen takes 20 minutes alone, then browning the beef and assembling the toppings adds another 15–20, leaving minimal buffer. All ingredients are mainstream at Harris Teeter, Food Lion, Walmart, ALDI, or Kroger, with no special stops required. Cost per serving lands around $3.50–$4.00, driven largely by the ground beef and double cheese blend; waffle fries and taco seasoning keep it reasonable. This is a crowd-pleasing weeknight dish that reheats poorly (the fries go soggy), so treat it as a same-night meal, but it feeds four with minimal fussiness and satisfies the classic Southern comfort-food appetite.
