Ingredients
12 ounces dried pears, roughly chopped
24 ounces apple juice, divided
12 ounces sugar
6 ounces corn syrup
1.2 ounces freeze-dried strawberries
1 ounce fresh lemon juice
3/4 ounce coconut oil
1/2 teaspoon rose flower water
Directions
In a saucepan, combine the chopped dried pears with 12 ounces of the apple juice. Bring to a simmer over medium heat, then reduce heat to low and cook for 15-20 minutes, stirring occasionally, until the pears are very soft and have absorbed most of the liquid.
Add the remaining 12 ounces of apple juice, sugar, and corn syrup to the softened pears. Stir well to combine and continue cooking over low heat for another 10-15 minutes, stirring frequently, until the mixture thickens into a dense, homogeneous paste.
Stir in the freeze-dried strawberries, lemon juice, coconut oil, and rose flower water. Mix thoroughly until the strawberries are evenly distributed and the mixture is smooth.
Preheat your oven to 160°F (70°C). Line a large baking sheet with parchment paper.
Pour the fruit mixture onto the prepared baking sheet and, using a spatula or offset knife, spread it evenly into a very thin, uniform layer approximately 1/8 inch thick. The mixture should cover most of the sheet.
Place the baking sheet in the oven and dehydrate for 90-120 minutes, until the surface is dry to the touch and no longer sticky, but the fruit leather is still pliable and flexible. It should not be brittle or crack when bent.
Remove the baking sheet from the oven and allow the fruit leather to cool to room temperature for 10-15 minutes.
Cut the fruit leather into 16 equal strips. Roll each strip tightly and wrap individually in parchment paper if desired. Store in an airtight container at room temperature for up to 2 weeks, or refrigerate for extended storage.
