Blueberry Mango Mojito

A tropical, refreshing mojito combining fresh blueberry puree with a homemade mango simple syrup, topped with sparkling water and muddled mint for a vibrant fruity cocktail.

Ingredients
fresh blueberries
fresh mint leaves
1 cup fresh mango, cut into chunks
1 cup sugar
1 cup water
2 oz light rum
sparkling water
ice
Directions
In a small pot, combine 1 cup water and 1 cup sugar. Heat over medium, stirring occasionally, until sugar is fully dissolved. Add 1 cup mango chunks and simmer for approximately 10 minutes, stirring gently, until the syrup lightens to a pale yellow and the mango begins to break down.
Remove from heat and transfer the mixture to a blender. Purée until completely smooth, then strain through a fine-mesh sieve into a bowl. Allow the mango simple syrup to cool to room temperature. Transfer any extra syrup to a glass jar for storage in the refrigerator.
Purée approximately ½ cup of fresh blueberries in a blender until smooth, then strain through a fine-mesh sieve.
In a tall glass, gently muddle a small handful of fresh mint leaves, a few fresh blueberries, and 2 fresh mango chunks together until the fruit releases its juices and the mint becomes fragrant.
Pour 1 oz of the blueberry purée into the bottom of the glass, then fill the glass with ice.
In a cocktail shaker, combine 2 oz rum and 1.5 oz of the cooled mango simple syrup. Shake well and strain into the glass.
Top the drink with sparkling water to fill. Garnish with fresh mint leaves, a few fresh blueberries, and mango chunks. Serve immediately.
