A tropical, refreshing mojito combining fresh blueberry puree with a homemade mango simple syrup, topped with sparkling water and muddled mint for a vibrant fruity cocktail.

Ingredients

fresh blueberries

fresh mint leaves

1 cup fresh mango, cut into chunks

1 cup sugar

1 cup water

2 oz light rum

sparkling water

ice

Directions

  1. In a small pot, combine 1 cup water and 1 cup sugar. Heat over medium, stirring occasionally, until sugar is fully dissolved. Add 1 cup mango chunks and simmer for approximately 10 minutes, stirring gently, until the syrup lightens to a pale yellow and the mango begins to break down.

  2. Remove from heat and transfer the mixture to a blender. Purée until completely smooth, then strain through a fine-mesh sieve into a bowl. Allow the mango simple syrup to cool to room temperature. Transfer any extra syrup to a glass jar for storage in the refrigerator.

  3. Purée approximately ½ cup of fresh blueberries in a blender until smooth, then strain through a fine-mesh sieve.

  4. In a tall glass, gently muddle a small handful of fresh mint leaves, a few fresh blueberries, and 2 fresh mango chunks together until the fruit releases its juices and the mint becomes fragrant.

  5. Pour 1 oz of the blueberry purée into the bottom of the glass, then fill the glass with ice.

  6. In a cocktail shaker, combine 2 oz rum and 1.5 oz of the cooled mango simple syrup. Shake well and strain into the glass.

  7. Top the drink with sparkling water to fill. Garnish with fresh mint leaves, a few fresh blueberries, and mango chunks. Serve immediately.
