Grilled Turkey and Blueberry Goat Cheese Sandwich

Ingredients
1 tablespoon butter
8 slices Texas toast or French bread, cut 1/2 inch thick
1/2 pound deli sliced turkey breast
4 ounces blueberry goat cheese
2 tablespoons honey or balsamic vinegar
Directions
Heat a large skillet or griddle over medium heat until warm. While it heats, lightly butter one side of each bread slice. Lay 4 slices butter-side down on a clean work surface. Divide the sliced turkey evenly among these 4 slices, layering it on the unbuttered side of each. Spread or crumble the blueberry goat cheese over the turkey on each sandwich base, then drizzle with honey or balsamic vinegar. Top each with the remaining bread slices, butter-side up, to form 4 complete sandwiches.
Carefully place the sandwiches in the heated skillet. Cook for about 4 minutes until the bottom is golden brown and crispy. Flip gently and cook the other side for another 4 minutes until also golden brown. The cheese should be slightly softened and warm throughout. Transfer to a plate and serve immediately.
