Ingredients
2 cups grape tomatoes
1 cup shredded mozzarella cheese
⅔ cup panko bread crumbs
⅓ cup grated parmesan cheese
1 tablespoon minced garlic
1 tablespoon fresh basil, chopped
1 teaspoon dried parsley
¼ teaspoon ground cayenne or smoked paprika
3 tablespoons olive oil, divided
Directions
Preheat your oven to 400°F. Lightly grease a 9-inch pie dish or shallow baking dish with about 1 tablespoon of olive oil.
Spread the grape tomatoes evenly in the prepared dish. Drizzle with 1 tablespoon of olive oil and sprinkle the shredded mozzarella cheese over the tomatoes.
In a small bowl, combine the panko bread crumbs, grated parmesan cheese, minced garlic, dried parsley, and cayenne (or smoked paprika). Mix until well blended.
Stir the fresh basil into the panko mixture.
Distribute the panko-cheese mixture evenly over the tomatoes and mozzarella layer. Drizzle the remaining 1 tablespoon of olive oil over the top.
Bake for 20–25 minutes, or until the topping is golden brown and crispy. The cheese should be melted and bubbly at the edges.
Remove from the oven and allow to cool for 2 minutes before serving.
Comments
This is a straightforward weeknight dish that hits well for a Charlotte table: tomatoes are plentiful and cheap year-round here, mozzarella and parmesan are standard at every local chain, and fresh basil and parsley turn up readily at Harris Teeter, Food Lion, Publix, and Walmart produce sections. The 35-minute claim is honest—slicing tomatoes, grating cheese, tossing the crumb topping, and baking runs right on schedule with minimal active time. Cost per serving lands around $2 to $2.50 depending on tomato season and whether you buy pre-shredded cheese, making this genuinely affordable. The only caveat is that the gratin doesn't keep: it's best eaten warm the same night, so plan it for a night when you'll finish it, not as a make-ahead or lunch box candidate.
