Ingredients
2 cups dry whole grain pasta shells
½ cup pumpkin puree
1 ounce light cream cheese
¼ cup fat-free evaporated milk
½ teaspoon minced garlic
½ teaspoon salt
Freshly ground black pepper to taste
¼ cup cooked, crumbled bacon
¼ cup sliced scallions (green onions)
Directions
Bring a large pot of salted water to a boil. Add the dry pasta and cook according to package directions until al dente. Drain thoroughly and return the cooked pasta to the same pot.
Place the pot over low heat. Add the pumpkin puree, cream cheese, evaporated milk, garlic, and salt to the pasta.
Stir constantly until the cream cheese is fully melted and the sauce is smooth and heated through, about 1-2 minutes. Season with freshly ground black pepper to taste.
Divide the pasta between two serving bowls. Top each portion with half of the crumbled bacon and sliced scallions. Serve immediately.
