1 large ripe tomato, cored, seeded, and finely chopped

1/4 small red onion, finely chopped

2 tablespoons fresh parsley, finely chopped

2 teaspoons extra virgin olive oil

2 teaspoons red wine vinegar

1/2 teaspoon minced garlic

1/4 teaspoon dried oregano

1/8 teaspoon low-sodium adobo seasoning

1/8 teaspoon crushed red pepper

1 pound skirt steak

1/8 teaspoon low-sodium adobo seasoning

Directions

  1. Prepare the salsa criolla by combining the chopped tomato, red onion, and minced garlic in a medium bowl.

  2. Add the fresh parsley, extra virgin olive oil, red wine vinegar, dried oregano, adobo seasoning, and crushed red pepper to the bowl. Stir gently to combine all ingredients evenly. Let the salsa rest at room temperature for at least 5 minutes to allow flavors to meld.

  3. Remove the skirt steak from refrigeration about 10 minutes before cooking and pat dry with paper towels. Season both sides evenly with the low-sodium adobo seasoning.

  4. Preheat your grill to high heat. Once hot, place the seasoned skirt steak directly on the grates.

  5. Grill the steak for 5 to 6 minutes per side, turning only once, until it reaches an internal temperature of 145°F when measured with a meat thermometer at the thickest point for a medium-rare doneness.

  6. Remove the steak from the grill and transfer to a cutting board. Rest for 3 to 5 minutes to allow the juices to redistribute.

  7. Slice the rested steak against the grain into strips. Divide among four serving plates and top each portion with a generous spoonful of salsa criolla. Serve immediately.
