1 can garbanzo beans, drained and rinsed

1 can (14 oz) coconut milk

1 can (14 oz) fire-roasted diced tomatoes

1 large red bell pepper, diced

1 small yellow onion, finely diced

1 jalapeño, seeded and diced

2 cups butternut squash, peeled and diced into small cubes

1/2 cup smooth peanut butter

1 teaspoon turmeric

1 bunch fresh spinach, washed and shredded

2 to 3 cloves garlic, minced

2 to 3 teaspoons fresh ginger, minced

1/2 teaspoon crushed coriander

1/2 teaspoon cinnamon

1 handful fresh cilantro, chopped

1 cup quinoa, dry, cooked according to package directions

1/4 cup roasted peanuts, roughly chopped

Directions

  1. Prepare quinoa according to package directions and set aside.

  2. Heat a large pot or Dutch oven over medium heat. Add the diced onion and cook for 3 to 4 minutes, stirring occasionally, until softened.

  3. Add the minced garlic and ginger to the pot and sauté for 1 minute until fragrant.
