Comments
Corn casserole is a Charlotte-friendly side that leans on pantry staples and fresh corn available year-round at every major chain—Harris Teeter, Food Lion, Kroger, Walmart, and ALDI all stock the six simple ingredients with zero special trips required. The stated 40 minutes is honest; there is minimal prep beyond mixing and baking, making this a true weeknight option that feeds eight as a generous side. At roughly $0.40 per serving, the cost is negligible, driven only by eggs and corn. It reheats well in a low oven, though it's best enjoyed fresh the same night when the texture holds.
