  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Working in batches if necessary to avoid crowding, add the beef cubes and sear on all sides until deeply browned, about 10 minutes total. Transfer the seared beef to a clean plate and set aside.

  2. Add the diced onion and carrot to the same pot and cook over medium-high heat, stirring occasionally, until they begin to soften, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Sprinkle the cumin, paprika, cinnamon, and ginger over the vegetables and stir for about 1 minute to toast the spices and release their aromas.

  3. Return the beef and any accumulated juices to the pot. Pour in the broth and stir well to combine. Bring the mixture to a boil, then reduce the heat to medium-low, partially cover, and maintain a gentle simmer. Season with salt and pepper to taste. Simmer for 45 to 50 minutes, stirring occasionally, until the beef is tender.
