Ingredients
3 tablespoons cornstarch
1/2 cup granulated sugar
1/4 teaspoon salt
2 cups milk
2 large egg yolks, lightly beaten
3 tablespoons unsalted butter, cut into small pieces
1 1/2 teaspoons vanilla extract
Sweetened whipped cream, fresh berries, toasted coconut, chocolate, or other toppings for garnish (optional)
Directions
In a medium saucepan, combine the cornstarch, granulated sugar, and salt. Stir together until well blended.
Pour in about 1/4 cup of the milk and whisk vigorously until the mixture is completely smooth with no lumps.
Add the beaten egg yolks and pour in the remaining 1 3/4 cups of milk. Whisk until fully combined.
Place the saucepan over medium heat. Whisk frequently as the mixture heats, until it thickens and just begins to bubble at the edges, about 2-3 minutes. Ensure the mixture reaches 160F.
Reduce the heat to medium-low and continue stirring constantly for another 5-6 minutes, until the pudding thickens to a creamy consistency.
Remove the pan from heat. Add the butter pieces and vanilla extract, stirring until the butter is completely melted and incorporated and the mixture is smooth.
Pour the pudding into a small serving bowl or divide among individual serving bowls.
Press plastic wrap directly onto the surface of the pudding to prevent a skin from forming. Refrigerate for at least 2 hours before serving.
Remove plastic wrap and top with your choice of sweetened whipped cream, fresh berries, toasted coconut, chocolate, or other desired garnishes before serving.
