Ingredients
1 lb Large peeled and deveined shrimp
1 medium Medium zucchini, sliced into half-moons
1 tbsp Olive oil
½ tsp Kosher salt
½ tsp Black pepper
⅓ cup Prepared pesto, divided
Directions
Preheat your grill to medium-high heat.
In a large bowl, combine the shrimp and zucchini slices. Drizzle with olive oil, then sprinkle with kosher salt and black pepper. Toss gently until the shrimp and zucchini are evenly coated with oil and seasonings.
Thread the shrimp and zucchini alternately onto skewers, distributing them evenly across each skewer.
Place the skewers directly on the grill grates. Cook for 4 to 5 minutes, turning occasionally, until the shrimp is opaque throughout and cooked to an internal temperature of 145°F.
Remove the skewers from the grill and brush them generously with 2 tablespoons of the prepared pesto. Serve the remaining pesto on the side for dipping.
Comments
Shrimp and zucchini are both reliably stocked at every major Charlotte grocer, and pesto—whether jarred or fresh basil and pine nuts—is easy to find at Harris Teeter, Kroger, and Publix without a special trip. The ingredient list is short and straightforward, keeping the cost per serving low, typically under $4 per person even with medium shrimp. The stated 25 minutes is honest if you buy shelled shrimp and jarred pesto; the main caveat is that skewers need babysitting on the grill or stovetop to avoid overcooking, so this is not a set-it-and-forget-it weeknight dish. Leftovers reheat reasonably well chilled or warmed through, and the bright, summery flavour makes it a natural fit for North Carolina's warm season and coastal supply of quality shrimp.
