Canola oil, for the grill

12 bone-in, skin-on chicken pieces (thighs, breasts, and drumsticks; about 4 pounds total)

Kosher salt

Black pepper

3/4 cup barbecue sauce

Directions

  1. Preheat your grill to medium-high heat (about 400°F). Lightly brush the grill grates with canola oil to prevent sticking.

  2. Pat the chicken pieces dry with paper towels. Season all sides generously with kosher salt and black pepper.

  3. Place the seasoned chicken pieces skin-side down on the grill grates. Cook for 15-18 minutes, allowing the skin to develop a golden-brown crust and char marks.

  4. Flip the chicken pieces over and continue grilling for another 12-15 minutes. The chicken should reach an internal temperature of 165°F at the thickest part of the meat (not touching bone).

  5. During the final 3-4 minutes of cooking, brush the barbecue sauce generously over all sides of the chicken pieces, turning to coat evenly.

  6. Remove the chicken from the grill and transfer to a serving platter. Let rest for 3-5 minutes before serving, allowing the juices to redistribute.
