Ingredients
4 slices thick-cut bacon
4 eggs
2 tablespoons milk
1 teaspoon butter, for cooking eggs
2 tablespoons butter, for buttering bread
4 slices whole grain or whole wheat bread
2 slices cheddar cheese
Salt and pepper to taste
Directions
Cook the bacon in a large skillet over medium-high heat until crispy, about 5-6 minutes. Transfer to a plate lined with paper towels to drain and cool slightly.
In a bowl, whisk together the eggs and milk. Season with salt and pepper to taste.
Melt 1 teaspoon of butter in the same skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs reach an internal temperature of 160°F or reach your desired level of doneness, about 3-4 minutes. Transfer to a plate.
Preheat your waffle iron to high heat.
Spread the remaining butter evenly on all four slices of bread.
Place the first slice of bread, buttered side down, on the hot waffle iron.
Layer half of the scrambled eggs, 2 slices of bacon, and 1 slice of cheese on top of the bread in the waffle iron.
Place a second slice of bread on top, buttered side facing out.
Close the waffle iron and cook until the bread is golden and crispy and the cheese is fully melted, about 3-4 minutes.
Carefully remove the first sandwich from the waffle iron and set on a plate. Repeat steps 6-9 with the remaining bread, eggs, bacon, and cheese to make the second sandwich.
Serve both sandwiches warm and enjoy immediately.
Comments
Every ingredient lands at Harris Teeter, Food Lion, Kroger, or Walmart without a second trip, and the cost per serving runs under $2.50 with bacon and good cheddar as the only variables. The twenty-minute claim holds if you're cooking bacon while the waffle iron heats; if you're starting fresh with raw bacon, add ten minutes of active time. This is a smart weeknight breakfast for two that reheats well in a toaster or skillet, though the bread's crispness fades after day one, so it's best eaten same-day or the morning after.
