Ingredients
3-1/2 cups unbleached all-purpose flour
1/2 cup instant mashed potatoes
2 tablespoons softened Irish butter
2-1/4 teaspoons instant yeast
2 teaspoons kosher salt
1 teaspoon sugar
1-1/2 cups warm water
2 tablespoons olive oil
6 medium Yukon Gold potatoes
8 slices bacon, cut into pieces
3 leeks, cleaned and sliced
2 cloves garlic, minced
Kosher salt to taste
Freshly ground black pepper to taste
2 cups grated Irish cheddar cheese
Cornmeal for dusting
1/4 cup fresh chives, snipped
Directions
In a large mixing bowl, combine all-purpose flour, instant mashed potatoes, instant yeast, kosher salt, and sugar. Stir until well blended.
Pour warm water into the dry mixture and stir until a shaggy dough forms. Add the softened butter and mix until the dough is evenly moistened.
Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic. The dough should be soft but not sticky.
Oil a large bowl with olive oil, place the dough inside, cover with a damp cloth, and let rise in a warm place for 20-25 minutes until nearly doubled in size.
While the dough rises, prepare the toppings. Cut Yukon Gold potatoes into thin slices and toss with olive oil, kosher salt, and pepper. Roast at 425°F for 20 minutes until golden and crispy, then set aside.
Cook the bacon pieces in a skillet over medium-high heat until crispy, about 5-7 minutes. Remove to a paper towel-lined plate and set aside.
In the same skillet with bacon drippings, add the sliced leeks and cook over medium heat for 8-10 minutes, stirring occasionally, until softened and beginning to caramelize.
Add minced garlic to the leeks and cook for another 1-2 minutes until fragrant. Season with salt and pepper to taste. Remove from heat.
Preheat oven to 475°F. Dust a large baking sheet or pizza pan with cornmeal.
Turn the risen dough onto the prepared baking sheet. Gently stretch and press the dough into a large, even circle or rectangle about 1/2 inch thick.
Layer the roasted potatoes, caramelized leeks, and bacon pieces evenly over the dough base.
Sprinkle the grated Irish cheddar cheese evenly over the top, covering all the toppings.
Bake at 475°F for 18-22 minutes until the crust is golden brown and the cheese is melted and bubbling.
Remove from the oven and let cool for 2-3 minutes. Garnish with fresh snipped chives before serving. Cut into 8 portions and serve hot.
