Ingredients

¼ cup unseasoned rice vinegar

3 tablespoons soy sauce

2 tablespoons honey

1 inch piece fresh ginger, peeled and minced

8 skinless chicken thighs

10 garlic cloves, peeled and minced

1½ teaspoon chili powder (such as gochugaru)

2 tablespoons vegetable oil

handful fresh green onions, chopped (including dark green parts)

Directions

  1. In a small bowl, whisk together the rice vinegar, soy sauce, honey, and minced ginger until well combined. Set this sauce mixture aside.

  2. Heat the vegetable oil in a large skillet over medium-high heat until it shimmers and just begins to smoke lightly. Carefully add the chicken thighs and sear them until deeply browned on all sides, about 10 minutes total, turning occasionally to ensure even browning.

  3. Reduce the heat slightly and add the minced garlic and chili powder to the skillet. Stir constantly for about 2 minutes, moving the mixture around the pan to prevent the garlic from burning.

  4. Pour the reserved vinegar sauce into the skillet and use a wooden spoon to scrape up any browned bits stuck to the bottom. Cover the skillet and reduce the heat to medium-low. Simmer gently for about 15 minutes, turning the chicken thighs a couple of times during cooking, until they are cooked through (internal temperature of 165°F).

  5. Remove the cover and stir in the chopped green onions. Continue cooking uncovered for 1 to 2 minutes until the sauce has slightly thickened and the flavors have melded. Serve hot over rice or with your preferred side dishes.
