Ingredients
1½ cup Long-grain white rice
3 cup Water
500 g Shrimp, peeled and deveined
15 oz Tomato sauce
3 clove Garlic, minced
Salt
Black pepper
½ tsp Paprika
Directions
Rinse the rice under cold water until the water runs clear. In a large pot, bring 3 cups of water to a boil. Add the rinsed rice and a pinch of salt, then reduce heat to low, cover, and simmer for 15-18 minutes until the rice is tender and water is absorbed.
While the rice cooks, mince the garlic cloves finely.
In a large skillet over medium-high heat, add the minced garlic and cook for about 30 seconds until fragrant.
Add the tomato sauce to the skillet and stir well. Season with paprika, salt, and black pepper to taste. Bring the sauce to a simmer.
Add the shrimp to the simmering sauce and stir gently to coat all pieces. Cook for 4-5 minutes, stirring occasionally, until the shrimp turn pink and opaque and reach an internal temperature of 145°F (63°C).
Fluff the cooked rice with a fork and divide among four serving bowls. Top each portion with the shrimp and red sauce. Serve immediately while hot.
Comments
This is a weeknight winner for the Charlotte area, where Gulf shrimp is readily available and affordable at any major chain including Harris Teeter, Food Lion, Publix, Walmart, ALDI, and Kroger. Every ingredient is a pantry staple or a routine grocery run—rice, canned tomato sauce, garlic, and basic seasonings cost under $12 total for four servings, coming to about $3 per plate. The 45-minute stated time is honest; rice simmers 18–20 minutes, shrimp cooks in 4–5 minutes, and browning garlic takes a few minutes, leaving room for multitasking. It feeds a family without fussing, reheats well the next day, and suits both weeknight speed and weekend ease.
