4 teaspoons canola oil

1/2 cup red onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, peeled and minced

1/4 teaspoon allspice

1/4 teaspoon ground cumin

1/8 teaspoon ground cinnamon

1/4 teaspoon red pepper flakes

1/4 teaspoon garlic powder

3/4 teaspoon salt

1 ripe mango, peeled and cut into 1/2-inch pieces

1/3 cup cider vinegar

2 tablespoons fresh lime juice

1 tablespoon brown sugar

1 pound large shrimp, peeled with tails on

Directions

  1. Prepare all ingredients before cooking. Peel and mince the garlic and ginger, chop the red onion, and cut the mango into 1/2-inch pieces. Pat the shrimp dry with paper towels.

  2. In a small bowl, combine the allspice, cumin, cinnamon, red pepper flakes, garlic powder, and salt. Set the spice blend aside.

  3. In another bowl, whisk together the cider vinegar, lime juice, and brown sugar until the sugar dissolves. Set the sauce base aside.

  4. Heat the canola oil in a large skillet over medium-high heat. Once hot, add the chopped red onion and sauté for 2-3 minutes, stirring occasionally, until softened.

  5. Add the minced garlic and ginger to the skillet and cook for 30 seconds to 1 minute, stirring constantly, until fragrant.

  6. Sprinkle the spice blend over the aromatics and stir well to coat, cooking for about 30 seconds to toast the spices lightly.

  7. Add the prepared shrimp to the skillet in a single layer and cook for 2-3 minutes on the first side without stirring, allowing them to develop color.

  8. Flip the shrimp and cook for another 1-2 minutes until they begin to turn pink and are mostly opaque.

  9. Pour the vinegar-lime-sugar sauce into the skillet and add the mango pieces. Stir gently to combine all ingredients.

  10. Reduce heat to medium and simmer for 2-3 minutes, stirring gently, until the shrimp are fully cooked and opaque throughout with an internal temperature of 145°F, and the flavors have melded.

  11. Remove from heat and serve immediately over rice, quinoa, or with fresh vegetables of your choice.
